Rice with Coconut Curry Veg

Ingredients for 2
1 Onion
Garlic to taste
1 Fresh green chilli
1 Carrot
1/2 Green pepper
1 Courgette
Medium-spiced or hot yellow curry
1 Tin of coconut milk
Salt
Mint
Parsley

Preparation
Chop onion, garlic and green chilli. Fry in pot. Cut carrot into small pieces. Add carrot and stir. Add curry. Cut green pepper into stripes and add. Stir veg. Cut courgette into larger pieces. Add courgette and stir. Add tin of coconut milk. Bring to boil. Add salt, mint and parsley to taste. Serve with plain rice or fruit rice.
