Ingwer-Karottensuppe – Ginger Carrot Soup

3 cm Ingwer in Scheiben schneiden und  4 Karotten fein hobeln. In 1 Liter Wasser kochen bis die Karotten weich sind. Ca. 100 ml Kokosnussmilch hinzufügen, nochmals aufkochen und passieren. Je nach Bedarf salzen und pfeffern.

Serviervorschlag:
Die Suppe mit gerösteten Sesamkörnern oder Speckwürfeln garnieren.

Thinly slice 3 cm of ginger and 4 carrots. Add the ginger and carrots to 1 liter of water. Simmer until the carrots are soft. Add about 100 ml of coconut milk, bring to the boil and remove from the heat. Mix the soup in a food processor until smooth and creamy. Add salt and pepper to taste.

Serving suggestion:
Garnish the soup with toasted sesame seeds or fried cubes of cured bacon.
