Currysuppe mit Gemüseeinlage – Curry soup with veg

Für die Currypaste folgende Zutaten vorbereiten: 2 Knoblauchzehen und 1 cm Ingwer in kleine Stückchen schneiden. 1/2 Zwiebel klein schneiden. 1/2 Teelöffel Koriandersamen und 1/2 Teelöffel Kümmel in einem Wok kurz anrösten.
Alle Zutaten zusammen mit 1 Teelöffel Pefferkörner in einem Mörser zu einer Paste zerstoßen.
1 Lorbeerblatt, 1 Anisstern, 1 Zimtstange und 2 Kardamomkapseln in einem Wok kurz erhitzen.
1 Lauch in dünne Scheiben schneiden. 1 Karotte und 1 Kohlrabi in kurze Streifen schneiden. Die Röschen von 1 Broccoli und 1 Rosenkohl abschneiden.
Die Currypaste in etwas Öl kurz anrösten. 1 Teelöffel Kurkuma hinzufügen. Den Lauch und die Karotten hinzufügen und kurz anrösten. Mit 1 Liter Wasser aufgießen, die restlichen Gewürze und das restliche Gemüse hinzufügen und nur solange kochen bis das Gemüse weich, aber noch etwas knackig ist. Mit Honig, Sojasauce, Sesamöl und Chillisauce abschmecken. Die Suppe nicht mehr aufkochen.
Serviervorschlag: Die Suppe mit gerösteten Sesamkörnern bestreuen.
For the curry paste prepare the following ingredients: Cut 2 cloves of garlic and 1 cm stem of ginger into small pieces. Cut 1/2 an onion into small pieces. Dry roast 1/2 a tsp. of coriander seeds, 1/2 tsp. of cummin seeds in a wok.
Put all of the above mentioned ingredients and 1 tsp. of pepper corns into a mortar and grind until the ingredients combine into a paste.
Dry-roast 1 bay leaf, 1 anis star, 1 cinnamon stick, and 2 cardamom capsules in a wok.
Cut 1 leek into thin slices. Cut 1 carrot and 1 kohlrabi into small rectangles. Cut 1 broccoli and 1 cauliflower into small pieces, preserving the flower-like structure.
Briefly fry the curry paste in some oil. Add 1 tsp. of turmeric. Add the leek and carrots and briefly fry them. Add 1 liter of water as well as the remaining spices and vegetables and simmer until the veg is soft but still firm. Add honey, soysauce, sesame oil and chili sauce to taste. Do not boil the soup after that.
Serving suggestion:
Garnish the soup with toasted sesame seeds.
